This chocolate was so easy to eat as a roasted nib we decided to make a variety of sugar options. The finished chocolate didn’t project the inherent sweetness we initially detected as prominently; consequently the 100% does convey bitter though much less than traditional chocolate and other 100’s we’ve experimented with. Considering the massive health benefits of cocoa we are always trying to find chocolate solutions that limit/eliminate the conflicting sugar.

  • The 70% shows off notes of baked raisin with a raspberry finish; some have noticed an apricot finish replacing the raspberry when aged.

  • The 80%-90% loses some of the raisin notes quickly and the raspberry/apricot finish gets a bit more tart as you reduce the sugar.

  • The 100% is a bitter chocolate with a mild nut finish. Something you may nibble while sipping a sweet dessert wine or to improve your health.
