For the Love of Fine Food!

Our Story

I've always had a profound love for fine food, yet I struggled with the cost of fully embracing my inner foodie. While I could afford occasional splurges at nice restaurants, the financial leap into true culinary exploration seemed too great. Thus, I often relied on the recommendations of others, yet I would tend to “play it safe” and order things I knew and understood; missing out on potentially extraordinary meals.

This all changed with my discovery of prix fixe meals, where the chef decides what you eat, leading to some of the most memorable dining experiences of my life. Inspired, I began requesting that waiters surprise me with the chef's best, hoping to encounter unique and flavorful dishes. This approach has brought me both delight and disappointment, from the unexpected joy of beef tartare served under a smoke filled goblet to the occasional suspicion of being served overstocked or simply the priciest menu items.

Driven to explore quality and unique dishes on my terms, I embarked on a home cooking journey, experimenting with recipes and techniques to share with my wife and four children, receiving mixed reactions as failure was often a part of success. Mad props for trying everything kids! My obsessive nature led me to meticulously test and refine recipes until they met my high standards; simultaneously preparing as many as 12 of the same meals and asking that everyone rate them.

So, how did chocolate enter the picture? A Christmas gift from my wife, "The Science of Spice," sparked my interest in the similarities between coffee and cacao beans, leading me to explore the potential of cacao. My wife, Susan, with her functional medicine practice, appreciated cacao's health benefits, prompting me to experiment with roasting and brewing cacao beans at home. Despite initial challenges, my passion for chocolate-making was born, grew to proper chocolate, and ultimately fueled by extensive research and experimentation.

Dedicated to capturing the unique flavor profiles of each bean, I've been refining my craft with the goal of sharing exceptional experiences through my offerings. More than creating the finest chocolate, my mission is to enrich lives with memorable moments, embracing the "seasonings" of life.
